Simple Sticky Chicken with Smashed Potatoes and Vegetables

Ingredients:

4 Chicken thighs - halved
1 Red Onion - cut into 1/8's
2 large potatoes, peeled and microwaved until soft enough to "smash"
1 cup frozen beans , diced carrots (Or optional garden salad)

Marinade:

1/2 teaspoon peanut butter
good slurp soy sauce
slurp sweet chilli sauce

(Combine in saucepan and heat on low until fully disolved and combined)

Method:

Add chicken to marinade
Line shallow baking tray with paper and lightly spray with oil
add marinated chicken at left of pan, smashed potatoes in centre, and red onion at right of pan.
Lightly spray all ingredients with oil.
Grate parmesan cheese over potato, and bake uncovered for approx 30 minutes at approx 390 Degrees F (Turn over chicken and onions after 20 minutes)
Serve with steamed (or microwaved) vegetables or salad.
Serves 2 people, or one if you're a gutz

I guess ely looked into it, and I am the only one that can not leave a message on your page!! For some reason I only have that happen on yours, and one other page so far. I only see the "about me" area when I go to your page. I noticed that on one other profile I visited also. It sort of sux because you and fuzz are the ONLY members that like me on the site, so it is really fucking up our relationship.
