    Lightbulb Christmas Recipes!

    So, I having a pot luck this yea at my home for a bunch of people who are far from home. I need suggestions for quick, easy and traditional or non-tradional Christmas Dishes.

    I make an amazing broccoli casserole and I don't even like broccoli that much.

    So, in addition to the eggnog and cider - help me out and give me ideas!




    I have a yummy easy one. Its a broccoli casserole.

    I'll put it i the recipe section too.


    Okay fresh or frozen broccoli works. Figure out your own amounts, its a really easy recipe.

    Get a cake pan or baking pan. Square or rectangular. Whatever.

    If I am using frozen:

    Take 2 bags of frozen broccoli florettes and cook
    A block of sharp cheese (don't ask me what size. Not too big, not too small)
    A package of cream cheese
    1/2 cup mayo
    A package of ritz crackers
    Butter, maybe 1/4 cup

    Put cooked broccoli in tray or gigantic mixing bowl with shredded cheddar and cut up pieces of cream cheese. Stir all together.

    Put ritz crackers in large ziplock bag and crush thoroughly.

    Flatten broccoli and cheese out in cooking pan and cover with light layer of cracker crumbs.

    Drizzle butter lightly over the top.

    Throw in the over like 350 for an hour. You may want to put on the broiler for 3 minutes to crust the top layer, but that is your choice.

    Yummy.


    You can also add cauliflower if you wish as wel. There are many variations of this recipe - all yummy.

    ^^haha, reads just like Julia Child.


    Btw, if u r going for less calories - you can use light cheese and cream cheese and fat free butter spray. Do not use completely fat free or it won't melt properly. Honestly you can't notice much of a taste difference and it saves a ton of calories.

    And for Dessert Chocolate Velvet Cheescake




    1 c Vanilla Wafer Crumbs
    1/2 c Chopped Pecans
    3 tb Granulated Sugar
    1/4 c Margarine, Melted
    16 oz Cream Cheese, Softened
    1/2 c Brown Sugar, Packed
    2 ea Large Eggs
    6 oz Semi-sweet Chips, Melted
    3 tb Almond Flavored Liqueur
    2 c Sour Cream
    2 tb Granulated Sugar



    1.Combine crumbs, pecans, granulated sugar and
    margarine; press onto bottom of 9-inch springform pan.
    Bake at 325 degrees F., 10 minutes.
    2.Combine cream sheese and brown sugar, mixing at medium speed on
    electric mixer until well blended. Add eggs, one at a
    time, mixing well after each addition. Blend in
    chocolate and liqueur; pour over crust.
    3.Bake at 325 degrees F., 35 minutes. Increase oven temperature to
    425 degrees F. Combine sour cream and granulated
    sugar; carefully spread over cheesecake. Bake at 425
    degrees F. 10 minutes. Loosen cake from rim of pan;
    cool before removing rim of pan. Chill.

    4.VARIATION:
    Substitute 2 Tablespoons milk and 1/4 teasponn almond
    extract for almond flavored liqueur.

    I made a corn casserole for Thanksgiving. I had never made it before, it was a friends recipe and I loved it and so did everyone else.

    1cube butter melted
    1can creamed corn
    1can regular corn undrained
    1pkg Jiffy Corn muffin mix
    1 8oz sour cream

    mix altogether and pour into a greased baking dish and bake at 350 for 30 min. Until toothpick comes out clean

    Sure I put this one up but so easy-takes about 10 mins to prepare. Warning ! although it doesn't taste too garlicky, the next day people sniff and say 'Strong smell of garlic'

    In large casserole put in chicken, a bottle of white wine (less glass for chef) olive oil and 1/4 il of butter(or less) salt, pepper. Tahe 3 HEADS of garlic , smack with palm so they break up, throw them in (no need to peel them). Put lid on cook on medium heat -or low til yr ready to eat. Chicken should be falling off bone. Serve with french bread and tomato/cucumber salad. Let pple help themselves...You squeeze garlic on bread, dip in garlicky buttery sauce then bung some chicken- beautiful.

    I got this from a friend last year and it is a huge hit.

    Pumpkin Cake

    1 spice cake mix
    1/2 c. applesauce
    1 can pumpkin
    1 pkg cinammon chips

    Mix it altogether and pour into a greased/floured bundt pan
    Bake 350 30-40 min or until a toothpick comes out clean

    I made a mistake the other day and grabbed a chocolate fudge cake mix and it wasn't until i had the applesauce and pumpkin in it that i realized it, so i added mini chocolate chips and baked the same way and it was awesome!!!

    Bacon wrapped chicken bites

    1 lb chicken breast cut into small bite size pieces
    1 lb of thin bacon
    1 cup brown sugar
    3 tblsp. chilli powder


    wrap the bacon around the chicken and secure with a toothpick, mix the brown sugar and chilli powder together then coat the chicken in it, place on foil lined pan and cook for 45 minutes at 400 degrees
