    SHENANDOAH SPAGHETTI

    4-5 chopped up boneless skinless chicken breast
    1/2 cup flour
    1 1/2 teaspoon salt
    1/4 teaspoon pepper
    Vegetable oil to depth of 1 inch in skillet
    1 small green pepper, sliced thin
    1 tart apple, chopped
    1 bay leaf
    1 can (8 oz) tomato sauce
    1 cup water
    1/2 lb. spaghetti, cooked

    Coat chicken with flour mixed with salt and pepper. Brown chicken in vegetable oil. Remove. Drain off all but 2 tablespoons drippings and brown bits. Combine remaining ingredients except spaghetti in skillet with chicken. Cover, simmer 15 minutes. Salt to taste. Serve chicken and sauce on spaghetti.
    6 servings.

    SOUTHERN FRIED CHICKEN ALMONDINE

    You can use, thighs, wings, breasts whatever pieces you like
    1/2 cup flour
    1 1/2 teaspoon salt
    1/4 teaspoon pepper
    Vegetable oil to depth of 1 inch in skillet

    Coat chicken with flour mixed with salt and pepper. Heat vegetable oil moderately hot (350 degrees) in heavy skillet. Add chicken, cover, cook 10 to 15 minutes. When golden brown, turn. Reduce heat. Finish cooking without lid. Turn as needed. Drain on paper towels.
    Keep fried chicken warm. To 1 tablespoon drippings and browned bits add 1/2 cup slivered almonds, brown lightly while stirring. Stir in 1/4 cup water, 2 tablespoons lemon juice, 1 teaspoon grated lemon peel, 1/2 teaspoon paprika. Serve sauce with chicken. Garnish with chopped parsley

    Spinach Stuffed Chicken Breasts


    INGREDIENTS (Nutrition)

    * 4 skinless, boneless chicken breasts
    * 1/2 cup mayonnaise
    * 1/2 cup crumbled feta cheese
    * 2 cloves garlic, chopped
    * 1 (10 ounce) package frozen chopped spinach, thawed and drained
    * 4 slices bacon
    DIRECTIONS

    1. In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
    2. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.
    3. Bake at 375 degrees F (190 degrees C) for 1 hour, or until chicken is no longer pink.

    Chicken Caprese


    Makes: 4 servings Prep: 15 minutes
    Cook: 10 minutes

    * 3 large ripe plum tomatoes (about 3/4 pound), cored, seeds squeezed out, and diced
    * 6 ounces fresh mozzarella, cut into small cubes
    * 5 tablespoons extra-virgin olive oil
    * 1 tablespoon balsamic vinegar
    * 1/2 teaspoon salt
    * 1/4 teaspoon black pepper
    * 3 tablespoons chopped fresh basil
    * 1/2 cup all-purpose flour
    * 2 eggs
    * 1/2 cup bread crumbs
    * 4 boneless, skinless chicken breast halves (about 1-1/2 pounds total)
    * Additional basil for garnish, optional

    Directions

    1. In a medium-size bowl, mix tomatoes, mozzarella, 2 tablespoons of the olive oil, balsamic vinegar, 1/4 teaspoon of the salt, 1/8 teaspoon of the pepper and chopped basil for the Caprese salad. Cover with plastic wrap and reserve.

    2. Place flour on a large plate. Lightly beat eggs in a shallow bowl. Spread the bread crumbs on another plate.

    3. Dip chicken first in the flour, then in the egg and finally into the bread crumbs, pressing to adhere. Sprinkle both sides with the remaining salt and pepper. Place on a large plate.

    4. Heat remaining 3 tablespoons oil in a large nonstick skillet over medium-high. Add chicken and cook about 5 minutes per side or until internal temperature reads 160°F on an instant-read thermometer. Turn a few times, if necessary, to avoid burning.

    5. To serve, spoon an equal amount of Caprese salad over each piece of chicken. Garnish with additional basil and serve with garlic bread, if desired.

    Rear chicken, look after it well then cut its throat (retaining blood) gut it,and defeather it. Put carcass in pot with blood and bottle of red wine, add garlic and onions then stew gently. Yumm

    CLASSIC CHICKEN DIVAN

    1/4 c. butter
    6 tbsp. all-purpose flour
    1/2 tsp. salt
    Dash of pepper
    2 c. chicken broth
    1/2 c. heavy cream
    3 tbsp. dry white wine
    1 bunch broccoli, cooked and drained
    3 chicken breasts, cooked, boned
    1/4 c. Parmesan cheese, grated

    Melt butter; blend in flour, salt and pepper. Add chicken broth. Cook, stirring until mixture thickens and bubbles. Add cream and wine.
    Place broccoli crosswise in a 12x7 1/2-inch baking dish. Place chicken over broccoli. Top with sauce. Sprinkle cheese on top. Bake at 350 degrees for 20 minutes.

    If you want, you can just replace the first seven ingredients with three cups of cream of chicken soup... it certainly cuts down the prep time!

    Here's another quick one you could pull off on a work night:

    CHICKEN, CARROT, CELERY, ONION
    ONE-DISH MEAL

    1 whole chicken (cut-up fryer size)
    1/2 c. flour
    3/4 c. vegetable oil
    2 c. diced carrots
    2 c. diced celery
    1 c. diced onion
    2 bouillon cubes (or 3 tbsp. vegetable mix for broth for no-salt diets)
    2 c. water
    Pepper and salt to taste

    Heat oil in large frying pan. Mix flour, pepper, salt in plastic bag and drop in washed chicken, shake until coated with flour. Place chicken parts in heated oil and brown. Remove chicken and place it in the pan your plan to use for baking in - 9 x 13 inches works well.
    Add all vegetables to the oil and saute until the onion is clear. Add the water with bouillon cubes (or broth mix) to the vegetables. Turn all the vegetables and mix into the pan with the chicken. Cover pan with foil. Place in 350 degree oven for 45 minutes. Serve with baked potatoes or rice.

    That sounds good! (and easy... which I like LOL) I just changed what I'm making for dinner tonite... I'll let ya know how it comes out.
