Extremely Easy to make and ohhh so good!
It's as simple as the title suggests, 6 cans & 1 pot.
Ingredients:
2 cans of chicken broth (if you want it a little thicker you substitute 1 can of plain cream of chicken soup)
1 can of corn (with liquid)
1 can of Rotel diced tomatoes and chiles (I drain these a bit but that's my preference)
1 can of black beans (rinsed VERY well. If you don't, you get grey colored soup. Ewww!)
1 can of chunk chicken, drained (I use Tyson's large can and you can even put 2 in if you like more chicken like me)
1 packet of McCormick Chicken Taco seasoning (you can omit this if you don't want the extra spice, but it adds a good flavor)
1 - 2 soup cans of water
Now here's the easy part! Dump all of that in a large soup pot, cover, and heat slowly so the flavors blend. That's it!
If you like, you can season it with the Southwest spices of your choice. For those who like it hot, a little cayenne pepper or even cook some jalapenos or serano pepper in while it heating up. I happen to LOVE cumin (that's cumin the spice you sickos! Save that for the other forums!) so I add a little extra in to give it that Southwest smoky flavor.
It makes a good sized pot and it's easy to freeze too!
Serving suggestions:
Here's how I like to serve it. Use a deep soup bowl and break up some tortillas chips in the bottom. Use a slotted spoon and put plenty of the chicken and veggies into the bowl. Ladel some of the broth over top. Top it with lots of shredded cheese and a good dollop of sour cream. You could even get fancy and add some crushed tortillas chips on top, but I never get that far.
Now serve it with a cold margarita (or 2) or a good cerveza and enjoy!
