Diced Chicken breast
red onions
green peppers
red peppers
garlic
tomato sauce
tomato paste
salt
pepper
olive oil
beans (if you must)
colby jack cheese (shredded)
diced tomatoes
fresh parsley
fresh cilantro
cayenne pepper (to taste)
~ cook the chicken breast in olive oil, sautee the garlic, onions and peppers
add to the chicken the add that to all the other ingredients and simmer til beans are tender... add the cheese and parsley at the end just before serving, serve with a dollop of sour cream
