Cous Cous with Garlic and Leeks
2 cups water
2 boullion cubes (any flavor)
1 cup cous cous
1/4 cup olive oil
2 leeks, chopped (white part only)
4 cloves garlic, chopped
1 t cumin
1 can garbanzo beans, drained
1/2 cup millet
1/2 cup cooked fresh or frozen peas
1 t freshly grated black pepper.
Add boullion cubes to water and bring to a boil. Add cous cous and take off the stove until cous cous is steamed.
In olive oil, saute the leek, garlic and cumin.
Combine all ingredients. Can be served hot as a pilaf or cold as a salad.
