LUMPIA
1 pound ground beef (or turkey)
1 carrot, peeled and grated
1 onion, grated
1 stalk celery, grated
1 t salt
½ t pepper
1 egg, plus one egg yolk
1 package egg roll wrappers (20 wrappers per package)
1 egg white (for sealing the wrappers)
Mix together everything but the egg white and egg roll wrappers. I divide the meat in the bowl into four sections to make five lumpia per section, just so my meat and wrappers come out even.
Lay out a wrapper and place a long, pencil-shaped roll of the meat mixture along a long edge. Roll up like a cigar and seal the long end with egg white. No need to seal the ends.
Fry in oil (about 2 inches) at 350 degrees until lightly browned, turning once
Drain on paper towels.
