1 cup butter (softened)
1/4 cup sugar
3/4 cup brown sugar
2 tsp vanilla
2 eggs
2 1/4 cup flour
1 tsp basking powder
1 box instant vanilla pudding (or choc)
1 bag white choc chips
4 tsp vanilla flavored ground coffee (or any flavor you like)
chocolate covered espresso beans

preheat oven to 350, mix together butter, sugars til creamy, add eggs, vanilla and beat well, in a small bowl stir together flour, baking powder, dry pudding mix and coffee, add to butter mix and blend well, stir in white choc chips, use an ice cream scooper to place balls of dough onto cookie sheet, bake for 10-12 minutes, as soon as they come out of the oven place espresso beans in the middle then place on rack to cool
